6 eggs separated
1.5 c sugar into egg yolks and whites
1.5 c walnuts or almonds, toasted is best, ground
2-4 oz semisweet/bittersweet choc grated
2 LARGE apples grated
_ c matzo meal
1 tsp vanilla extract (optional)
_ tsp salt
Grate apples (I do this in the Cuisinart ). Mix in nuts,  chocolate and matzo meal (I do this in the Cuisinart). Beat yolks with _ c sugar until really light. Add everything except 1 c sugar and whites. Beat whites to soft peaks with sugar, fold in whites into nut/apple mix
Bake 350oF 35-45 min 9-10 " springform pan (I usually use a 10") lined with parchment paper.
